Stuffed Zucchini Boat

Ingredients
- Butterball Sweet Italian Turkey Sausage (w/ “lean” on label”)
- 5 Zucchinis (medium-large)
- 1 Onion- Diced
- 1 T Olive Oil
- 1 Can Diced Tomato
- 1 C Panko Bread Crumbs
- 1/4 C Parmesan Cheese
- Italian Seasoning
- Garlic
- Parsley
Directions
- Preheat oven to 400 degrees & grease pan with olive oil.
- Hollow out zucchini, leaving a quarter inch rim on all sides.
- Place them in the pan and drizzle with 1/2 T olive oil.
- Bake in pre-heated oven for 15 minutes.
- Sautee onion in 1 T of olive oil for 3 min.
- Add in sausage; crumble & break up with spatula while cooking; brown and add garlic once cooked through
- Remove from heat
- Add tomatoes, Italian seasoning, and 1/2 C Panko breadcrumbs; stir.
- Fill zucchini boats with the mixture
- Top boats with parmesan and remaining breadcrumbs.
- Bake in oven until tender (about 10-15 minutes).
- Top with parsley (optional)
