High Protein Zucchini Boat Recipe

Stuffed Zucchini Boat

Ingredients

  • Butterball Sweet Italian Turkey Sausage (w/ “lean” on label”)
  • 5 Zucchinis (medium-large)
  • 1 Onion- Diced
  • 1 T Olive Oil
  • 1 Can Diced Tomato
  • 1 C Panko Bread Crumbs
  • 1/4 C Parmesan Cheese
  • Italian Seasoning
  • Garlic
  • Parsley

Directions

  1. Preheat oven to 400 degrees & grease pan with olive oil.
  2. Hollow out zucchini, leaving a quarter inch rim on all sides.
  3. Place them in the pan and drizzle with 1/2 T olive oil.
  4. Bake in pre-heated oven for 15 minutes.
  5. Sautee onion in 1 T of olive oil for 3 min.
  6. Add in sausage; crumble & break up with spatula while cooking; brown and add garlic once cooked through
  7. Remove from heat
  8. Add tomatoes, Italian seasoning, and 1/2 C Panko breadcrumbs; stir.
  9. Fill zucchini boats with the mixture
  10. Top boats with parmesan and remaining breadcrumbs.
  11. Bake in oven until tender (about 10-15 minutes).
  12. Top with parsley (optional)
