Healthy Sweet Potato Breakfast Hash

Ingredients
- 1 Medium Sweet Potato
- 1 Perdue Chicken Sausage link
- 1 Egg, 2 egg whites
- 1 C Chopped kale
- 1/4 red onion
- 1/2 red pepper
- 1 tsp olive oil
- Season generously as desired with the following:
- Garlic, paprika, cumin, salt, & pepper to taste
Directions
- Dice your sweet potato, red onion, & red pepper.
- Thinly slice kale.
- Slice chicken sausage.
- Heat skillet with olive oil; add red pepper & red onion over medium heat until onions are translucent.
- Add chicken sausage & diced sweet potatoes to skillet & cook until potato squares are tender (about 8 minutes).
- Once tender, add cumin, garlic, & paprika to the skillet.
- Add in kale after 3-5 minutes.
- Crack one egg in the center & 2 egg whites around the edges
- Add salt, pepper, & cover for 2-3 more minutes so the egg whites are set but yolk is runny
- Taste & add seasoning to liking- enjoy!
